Elbow Noodles: Elbow noodles serve as the foundation of this dish, but of course, any type of noodles can be used. Pasta is *almost* always vegan-friendly, it’s just flour and water! Just be sure not to accidentally pick up egg noodles.
Vegan Ground Beef Crumbles: Using vegan beef crumbles adds a hearty texture and mimics the taste of classic cheeseburger pasta. Made from plant-based ingredients such as soy, peas or beans, meat substitutes are a protein-rich option to replace animal-based beef. As an added bonus, plant-based foods are naturally cholesterol free and often lower in saturated fat, as well.
Canned Coconut Milk: Creamy coconut milk forms the base of the vegan cheese sauce, lending a rich and indulgent texture to this comforting meal. Coconut milk adds a luxurious creaminess without compromising the overall healthfulness of the recipe, and especially when used here, you won’t even taste the coconut.
Nutritional Yeast: Nutritional yeast is the secret ingredient that gives the cheese sauce its cheesy flavor without any dairy. It’s packed with vitamins, minerals, and protein, and is a great source of vitamin B12.
Paprika: Paprika adds a subtle smokiness and a pop of color to the cheese sauce. Paprika also offers a dose of antioxidants, including vitamin C, which supports immune health and overall well-being.
Onion and Garlic Powders: Both onion powder and garlic powder contribute aromatic flavor to the cheese sauce and really bring out the flavor. These pantry staples not only enhance the taste of the dish, but also offer potential health benefits, including anti-inflammatory properties and immune support.
Dijon Mustard: Dijon mustard adds a tangy kick to the cheese sauce, balancing the richness of the coconut milk and nutritional yeast.
Agar Agar: This important ingredient serves as a vegan alternative to gelatin It helps to thicken the cheese sauce and give it a smooth, creamy texture. Derived from seaweed, agar agar is a natural plant-based ingredient that sets this recipe apart from conventional cheese sauces. It adds stability to the sauce while contributing minimal calories and serving as a source of fiber. Confused about where to get it? No worries, I went years avoiding recipes that called for this ingredient before I finally decided to find some and learn how to use it. I’m going to make this really easy for you! Agar agar can be purchased on Amazon, or elsewhere online by simply searching for it. It’s very inexpensive and a little bit goes a long way, so I just buy a small bag on Amazon and it lasts me for months.
Salt and Pepper: Just a pinch of both brings out the flavors of the other ingredients and enhances this meal. Feel free to add more salt and pepper when serving if preferred.
Optional Green Onions: Fresh green onions add a vibrant pop of color and a fresh flavor and crisp texture to your Vegan Cheeseburger Pasta.
